2. Some - you need to add some liquid. How much depends on you. I do about a 1/2-1 cup. I stick the meat in the foil and then dump some on. You don't want a swimming island, and you don't want it dripping all over the deck, but you don't want it dry either.
3. I don't do straight booze, it can get bitter, but a little Jameson in with the juice never hurts. I tend to use apple cider.
