Hi, I'm new to this. I'm trying to get a Cajun elec. smoker. I should have it ordered by the end of the week (little web site problem). I live in upstate NY near Oneonta and Binghamton. I fish, hunt , camp , and drink beer . The rest of my time I just waste. (semi Retired). I really want to smoke some trout, and deer, and hope I'll get through the learning curve before opening day on the West Branch of the Delaware, near Deposit NY. I'll be testing it out on freezer meat. I need all the help I can get. Is there any local people here ?

Hello Jim.  I responded to another of your post a few minutes ago.

I am just feeling my way into ice fishing after a 35 year break so I may have to learn to smoke fish other than salmon soon.

I never got into ice fishing, but now that I'm retired I might give it a try. I trout fish alot (35-50 times a season), on the west branch of the delaware, near Deposit, so smoking trout is probably gonna be my big thing, although I get a couple of deer a year too, so I'm sure that will play a roll. For now I've got alot to learn. how much smoke, heat, rubs, brines vs marinaides, on and on.

   You're not far from skaneateles lake , right ? that must have some ice fishing opportunities. I could go to whitney point or Norwich lake. I imagine I could go to cannonsville, or the papacton, but there's nothing right near me.

   I've been trying to buy a Cajun Injector electric smoker (same as mastercraft) but it's either out of stock or overpriced. I've seen a $100 difference on a $200 smoker. This web site advertised one for $199 w/ free shipping, then told me it wasn't supposed to be on anymore, another tried to charge me an extra 85 to ship it. So I'll keep trying but I might end up with something else. I think electric sounds better, but you probably know better. I just wanna keep it simple. If it's easy I'll use it more often.
 
Hey Martin, just saw your welcome. Thanks. I used to do jobs in the elmira, corning, painted post area, Retired now. Hey I'm smokin a whole chicken today as my first project. I brinked it 4 hrs. this morning, and cooking now 2hrs. so far, probably need 4 or so. I split up some oak from my firewood stack about 1/2 in thick, then band sawed it to squares about 3 inches . So far so good. BYOB.......
