Jerky in a MES30

you can most definitely do jerky in the mes 30. It is actually quite equipped for such a task. Because you can regularly increase the temperature increase mentally, which is what jerky prefers

I use toothpicks or skewers to hang in between the grates myself. As far as woods? Depends on your tastes. I tend to use more "medium" woods like hickory or oak when smoking jerky. But I would start out with something more light like apple or cherry your first couple runs to make sure you don't over do the smoke flavor.

Cherry and apple are my my favorites and have plenty of it. I do have skewers and toothpicks but not sure how to use.
 
You will have to make some small changes,read thru an you will see how it can work for jerky.

Use the heavy round toothpicks through the ends of you jerky strips and suspend on your rack so the jerky hangs down. You are able to get more jerky on each rack using this method. I like hickory on my jerky, go light until you figure out your smoke tastes,if you go with too much smoke you can ruin the whole batch.
 
This my first try. Much better than anything I have ever bought in a package. It came out smoked right with the cherry flavor that I like with beef. 1/4" thick, 200 degrees for 1.75 hours with cherry. This was with Hi-Mountain Hunters Blend Jerky Cure. Not bad but think I could do much better.

Need a different flavor cure. I am kind of fond of Lea and Perrins Worcestershire sauce and Lea and Perrins Bold Bold. Can I make a jerky cure from Lea and Perrins stuff?

I use Nepas Hillbilly Backwoods jerky recipe, I omit the liquid smoke because I use the Copperhead to do the jerky in. His recipe has worcestershire sauce.
 
Looks good! When I use my smoker. I use bamboo skewers to hang them. In bad weather I just add liquid smoke to the mix. And use my jerky trays in the oven. I just posted my latest batch of jerky if you want to check out the recipe I used.
