Yeah mon. Mines mostly from a book and it's killer but prefer it on pork. For chicken I prefer a dry rub and then make a sauce to use at the end and for dipping. Last version is basically near perfection to me/pound the table/moan. I'll try to remember and take notes next run for the sauce.Wanted to add that I think @zwiller has spent a lot of time developing a jerk paste too.
Here is the marinade from Chef JimmyJ
Real Deal Jerk Marinade/Mop
2C Chopped Scallion (2 Bunch)
1C Diced Onion
1/2C Chopped Jalapeno or 4Ea Habanero (HOT)
1/2C Olive Oil
1/4C Soy Sauce
1/4C Molasses
2T Fresh Minced Garlic
1T Fresh Thyme Leaves
1T Fresh Grated Ginger, about 1 inch.
1Ea Lime, Juice and Zest
2tsp Kosher Salt
2tsp Ground Black Pepper, about 12 Peppercorns
2tsp Ground Allspice, about 10 Whole Berries
1tsp Ground Cinnamon, 1stick grated
1/2tsp Ground Nutmeg, freshly grated
I make a similar to slather my chicken for an overnight bath.
I rinse off the excess as it tends to burn. Grill chicken in oak wood.
