After the success of Cottage Pie recently [beef version of Shephard's Pie] I took on Jambalaya all cooked on the grill using a cast iron dutch oven.

All worked well.

I cooked the sausage (chorizo), veggies and then chicken all in the pot plus stock etc. Given I'm using a grill, is there s better technique? Should I have grilled the sausage and chicken first?

Looks good. I cook the meats first. Then add the seafood during the last 5 minutes if being used. Also, this is a personal preference, but I prefer a firmer results. I'm guessing yours is looser from the liquids in the meats. Either way. I'm betting it was delicious!
 
Looking darn tasty! Just started making jambalaya and gumbo myself last fall, great change of pace for us
