Here is s dish I've done a few times in a couple different ways. This time around it was made in the oven. But grilled or smoked work well too.
Start up with 4 breasts that have been trimmed. And cut open to create a pocket for the filling.
Then stuff with sliced jalapenos and cheese.
This time I used string cheese that I smoked a couple weeks ago. I have used cheddar. And once with a 50/50 blend of cream cheese and cheddar. Then give them a seasoning rub. I used Stubb's chicken spice.
Then wrap in bacon.
Then put in a pre-heated 350 degree oven. And cook until IT hits 160. The turn on the broiler for a few minutes to crisp the bacon a touch.
The side was a simple mac salad with spices, fake crab, and red wine vinegar.
This is a pretty simple dish. And it is real good. Though if you brine the bird first. Then smoke it. Then I find them to be much better.
