that brings me to one of my many questions. What should I use to paint/coat the outside of the smoke house to protect it? It's not really going to be the size of a smoke house but more like a smoke "locker". Is there anything out there that's going to provide protection without being toxic?

As long as it is going to be on the outside will it make much of a difference?  Thompson's water sealant works great!  We have used it up at the cabin for our wood docks.  It will last a few years and it will keep the wood from weathering.  it works well on our docks it will be great for your application too.  Our docks are wet alot!
