So I got off my butt and did a butt.

Minimal rub of Kosher salt, ground pepper, light dusting of granulated garlic and hot smoked paprika. Wrapped in plastic in the cooler for a day then into the smoker.

Didn't wrap in the smoker. Took it straight to 205 in a 275 smoker. Then pulled it and did the wrap in foil then towels and then into the cooler. Wonderful bark for a pellet smoker.

Used 100% pecan pellets from Smokin' Pecan. Really nice aroma during the smoke. Finished product turned out to be quite edible.

The pecan shell pellets have become my go-to in my smoke tubes. The profile is outstanding.
 
Turned out pretty good. Leaning more and more to simple pre smoke rubs.

This one is pulled not sliced. I trussed it up just because......and the cleaning ladies came over and for some reason left the kitchen string on the counter rather than back in the cabinet.

Also really like not wrapping it in the smoker at the 160 stall. Taking it to finish unwrapped really boosted the browning/bark/flavor in the pellet smoker (Pit Boss Brunswick vertical).

My son is coming over for Sunday dinner. The rest gets portioned out and into the freezer.

I think this upcoming week is going to be Tex Mex.....
