I've been eating my cheese with in a week to 3 weeks....Storage ?

....and i't's been great!    Does it get better aging even longer?   I'm trying not to do too much at a time because i don't want it molding even though it's vacuum sealed.    How long have you all stored it sealed and in the fridge?

BTW, i smoke mine between 60-80 degrees, i feel more smoke takes when it's warmer.  One of these days i might take a chunk and wax it, store it in the cupboard to see how it does. 
 
I will not eat any until its 2 mo. aged and my oldest is now 4 mo. Nepas has some around 2 yrs..
 
I have some that's close to 4 months right now and no mold. I think as long as air doesn't get to it it will last almost indefinitely.
