Its a turkey went on at 2:30



Honey mustard and Emerils Essence and a few spices of my own.

I was a chef for 11 years. There is nothing a know as a dry bird!!!

It was at 120 in the breast and thigh. When i checked last.

I was thinking of basting it with Samuel Adams Octoberfest, but I desided to bast myself frist!!!!!!
 
Heh... good choice. A butter or oil based mop/baste would serve ya better. Speakin' of the 'Fests... the local got the Hacker-Pschorr in last week. The REAL McCoy on tap! Nothing against Adams, well except maybe they over-hop typically ;{)
 
What type of cooking unit you using? a couple of years ago I did a turkey in a great outdoors, smoky mountain series, gas smoker real low for about 6 hours, and it was great. But nothing beats the one I did on a camping trip 13 years ago on one of them orange capsul looking brickett burning ones. started it in the morning, went hicking 4hrs later restoked the Kingsford, went hicking again, came back at dinner time, and had the best thanksgiving diner my wife and I can remember. bin wanting to do one on my new Treager but I did a chicken and the skin turned out like rubber
 
well dont get to basted untill you get that bird off lol. im basting tonight too. looking good.
 
That was the best turkey in have ever had!!!!!



I used a honey,mustard,oil,brown suger to bast it with.
Can't wast good beer like that.



Has any one ever stuffed a turkey and smoke it?

I was thinking about a sauasage stuffing it will be cooked first.
 
temps are too low to get it through the danger zone quickly.
