There will be a whole bunch of people at my place for the Super Bowl and I need to smoke a whole bunch of food in my MES 40.  The new hated model.  That being said my question is what would you think of six racks of ribs and two pork butts at the same time?  I could get them all in there but do you think the MES will hold up to the challenge.  I'll start the pork butts early and add the ribs later all at a temp of 225.  I guess I'm wondering if you would put that much in there at one time or should I split it up and make the pork butts first then the ribs seperately?  BTW the AMNPS will be in there no matter how I go....

The butts will take 12+ hours to get done . I would do them ahead of time and reheat.
That way you have room for snacks to smoke , ( pork shots, ABT's , )

It will handle it but I think doing the Butts ahead would guarantee something is done on time and then you can mess with the Ribs. Two Racks per shelf will affect the convection so you will have to rotate the shelves, top to bottom, about every hour for even cooking... Honestly I would get the bulk done ahead and just reheat. You want to watch the Game and consume mass quantities of Beer too not mess with the smoker, other than maybe some quick snacks, ABT's, Wings, Etc...JJ
