What's your smoking plans for the weekend?


Saturday is my wife's birthday - smoke free

Got a brisket ready to be cooked on Sunday, probably some chicken parts as well.

How about you?
 
Tonight - nada

Saturday - ribs of course... doing a couple slabs of bb's for the football games. Ill also see if I can find something else to toss on the WSM as a snack. Gonna be warm... 37 degrees+.

Sunday - nada
 
Going to do a brisket and some burnt ends, probably pick up 2 briskets so I can start curing one for pastrami as well.
Need to get in some more brisket practice and perfect the smoke on it as I just found out that evidently I will be doing a few comps. next year.
 
I am going to fire up my UDS for the first time tomorrow and do a whole turkey. Then I will fire it up again on Sunday and do three racks of baby backs for the big Vikings game. I will also be smoking 4 huge fillets of salmon on my big propane smoke shack either Sat or Sun.
 
I have a 12.5 lb brisket thawing right now and waiting some rub for an all nighter saturday night for a big family dinner on sunday.
 
Nothing for me this weekend. Have a date with my lovely wife on Saturday. We're going out of town for the night and taking in a movie and dinner. I'll be coming home to late Sunday to cook anything.
 
dang asian market didnt have bb ribs, so I either gotta search around on the way home or go with plan B(dont know what that is yet). Enhanced ribs just arn't and option.
 
Going to put on some beef ribs and give that recipe for Dutchs Ranch Beans a try.

NO NO NO. The big Vikings game. I am pretty sure the Cowboys are going to come up to MN and freeze their little butts off but they will go home with a win. The vikings always screw me over and I don't see this year being any different.
 
Don't you have a good butcher near you? I love my butcher. Koellner's out of Rockville Centre, NY. Wonderful guys in there. Get me just about anything I ask for. Nothing is enhanced. My sister-in-law even got me a gift certificate for them for my Bday recently.

This weekend I've got another set of bacon going on the grill. Also decided I'm going to smoke some Cheddar to have for the Superbowl.
 
I have a couple good butchers around, one that slaughters his own hogs(too late in the week to get an order in with him usually have to do that by Tuesday). The other charges $4.99/lb for BB ribs(they are meaty). I prefer to go to a couple spots near my work(closer to Chicago) that are about half that price($2.99/lb.)

I have one more spot I may try on the 70+ mile commute home, I just cant take to long or go too far out of my way, I have a babysitter at home that needs to start her weekend too.

Worst case I just get 1 slab at the expensive butcher tomorrow instead of 2.
 
I plan to smoke something with pepperoni on it, but dont know what just yet.

As for the Grill, i plan to grill up a Raspberry Chipotle Pork Tenderloin. Should be tasty
 
I quit buying ribs anywhere but my local butcher. If he's out I just suffer till he has them back in. I always do spares trimmed down to St. Louis style. I tried BBs but really do prefer spares.
 
I like butcher shops for sure.

Brookhaven's got some good ribs/fresh pork as well as Caputos, small local chain grocers. Plus there is always Peoria Meatpacking, but they are the opposite direction & close @ 5:00.

I could have gotten spares, but I had those last week, & bb's the week before(gotta alternate, I like both about the same). Ill probably end up over @ Polancics in Ottawa tomorrow a.m. for some of their bb's.
