It's 4am, Do You Know Where Your Brisket Is?

That's a bummer about the brisket John. One question - before your wrapped and tucked it away for a rest did you let it cool down to 170*? I have to admit I like the dog food hash. I make it at least once a month. Hormel is my favorite brand.

Man, you started out with one of the best most uniform in size & thickness brisket flats I have ever seen.
I thought this was going to be something special!!
But in the end yo pulled it out & finished with another excellent looking meal!

Whipped up a spicy batch of Red Chile sauce using Gaujillo and Arbol chile powders.
Tossed in the remainder of the beans some more onion, bell pepper, garlic and some spices.
Cubed and shredded the rest of the brisket and threw it in the pot too.
Let it simmer for a short while and it turned into a very nice pot of brisket chile.
It's got a pretty nice bite to it too.

Yeah Chris, a tad disappointing, but all wasn't lost, it made a good chile.
I didn't check the IT before wrapping, but it sat on a cutting board for maybe 10-15minutes while I chopped cucumbers.
Chile the meal looks very filling.

It was filling, Beef-n-Taters seldom fails to stick to the ribs.
And those mashed taters were loaded with butter and sour cream, yum!

You're telling me, that Flat looked/felt freaking awesome.
But it sure didn't cook up too great, at least not for juicy/tender slices.

I'm with Al. That was one of, if not the most, amazing looking precooked briskets. I've only had one brisket fall into that category and it's the brisket cook I stressed the most over :confused::D

But everything looks like it came out great in the end. Well done.
