Next batch of salami on deck for tomorrow. Bought a 9# sirloin roast, and 32# pork boston butt. Also picked up 5.8# pork cheek trim fat from my butcher. Gonna do more pepperoni and genoa first, 5kg each, then 5kg. of Calabese Soppressata and 1 kg. of nduja. Gonna fill up the chamber. I'll try and remember to take some pics. for y'all...

Thanks smokerjim! As long as the power does not go out, should be fine. SWLA looks to be in the bullseye for this one, and she's projected to ramp up to a Cat3 before landfall...125mph winds....

Hang in there.Stock up on beer for the fridge and gas for the generator.
 
As of right now...the storm is projected to hit the La./Tx. boarder. I am just south of Baton Rouge by 30 miles so we should be good here...unless the track changes drastically....which you never really know with these things....
 
Now projected 145mph winds at landfall....That is real bad for those in the path of hurricane force winds. They say 14' storm surge and water rising up to 30 miles inland...lots of people gonna be in a bad way when this is over. They are gonna need lotsa help. I may be at my cousins place ...he is in the path of this monster storm....

Well, pepperoni is stuffed and hanging in the fermentation trash can. Still have to prick the casing, apply mold-600, and truss but will wait until genoa is stuffed and do all at once.

You out in SWLA?? I got family in Lake Charles. They have evacuated... This one is gonna be Katrina for SWLA....gonna suck real bad....
