Well, I have had a ball making sausages and trying different things with them. I tend to make small batches (5# +/-) but make a LOT of different kinds. One of my favorites has been the Italian sausage and I make both a sweet version and a spicy version. This sandwich was made with the sweet one....although it really isn't sweet so I have no idea why it's called that 
Lightly fry the sausages in a pan
Sauteed onions and green peppers in a bit of olive oil
Homemade marinara sauce
Split the sausages and lay them on a sub roll
Add the veggies
A good shot of marinara
Provolone cheese
Onto the grill to melt cheese and brown bread
Money shot. This is a nice looking sammie!!
This was REALLY good and very easy to make. Wife asked for the sweet sausage this time but next time I'll be doing the spicy. I just think it'd go well with the marinara, which has a bit of a tingle to it. Was short on time this go around but next time I'll also do some hand cut fries in the air fryer. That should be the coup de grace!!
