It begins, “Friendly” Neighborhood Comp

We started the neighborhood competition tonight. 8 Butts, 4 x 2 Pnd Tri Tips, 3x Spare Ribs, almost 4 gallons on Gary’s beans, and 50 twice smoke potatoes for three events: Chefs choice at 1300 Sat, people’s choice from 1500 to 1800, the Rib judges panel at 1800. It’s open so we’re using two pellet poopers, and 4 kettles. Looking forward to sharing with anyone who cares to take the time to watch. I’m the most experienced on 7 on the team…which is scary. Lots of nice big rigs out here for a neighborhood event!

Thanks for watching. Long night, little problems popping up like they always do if you aren’t cooking for yourself. Pork butts are getting done way ahead of schedule despite lowering temps from 250 to 225 and now 210. I’m thinking it’s because we have no humidity right now and all the practice smoke have had very high humidity. There are some serious rigs out here that are nothing like a neighborhood get together that I’ve seen. But, great company and new “friends!” Haha! Invite stands! Swing by for a free beer!

Well it was a long couple days, but we had a blast. Finished 4 of 13 teams so we are excited for our first showing. Fed almost 1200 people a taste of PP and beans, turned in pretty good ribs to judges panel, and great response with tri tip and smoked beans on Chefs Choice. More important made great friends and a lot of positive memories. Thank you for your interest and support.

Haha, that thing was insane! I got to busy to ask him dimensions. Some hospital had it made for charity and group get together so and they let him use it if he cooks for them too. It was really unique, firebox was in the back of the pit and ran the whole length, not the width, so the back was a hot spot and the front cooler. 6 rack, the length of the smoker, would rotate on a Rotisserie belt. To go from hot to cooler. It was a legit monster wood burner. They made an amazing Cuban marinade pork butt.
