I smoked my baby back all afternoon. My smoker did not come up to the temperature that I was trying for, but long and low cooking with the hickory and apple wood chips made the ribs very tasty, At the end, I fired up my gas grill and brought the ribs up to temperature, and served them with Loaded baked potatoes and a corn salad.
I have a plan to overcome the design flaw in my offset smoker that is keeping me from reaching the proper temp.
I will report back once I fix this and do my next smoke.
