It's a wood smoker, right? Like wood chunks? Sorry, I've been an electric wood chip smoker from the beginning, but willing to expand my horizons now that my MES is on the fritz.I had a gas smoker, it was ok in cold weather, grab the other lot easier to control temps and better flavor sometimes lol
My MES is down right now. Controller stopped working so I guess I need to do the Auber mod thing. But just saw these and thought a different way of smoking might be cool.I think that's a pretty good deal. I recall seeing some guys talking about the Smoke Hollow and that it's good, but sometimes struggles to hold temp. If you have an MES, I don't think you really need it, so you could just go for the offset.

The $50 you save and spend on a PID controller and doing the MES rewire would be a great investment, plus you add a "D" to the end of your name here and you become the pid guy!!! :D
As you can tell I am biased but there is plenty of evidence as to why I I'm on big on rewired MES with PID controllers :D

Nothing is more set and forget than a PID run electric smoker. Get a reliable 4 probe wireless thermometer with high and low alarms, do the AMNPS + mailbox mod setup, and you can smoke just about anything in a hassle free manner!
I live in brisket country and about 2 times a month get $0.87-$1/lb pork butt sales. So those things get smoked overnight while I'm sleeping and I only go check on it when the alarms tell me it's time to check for tenderness or the alarms indicate a pellet flame up has occured.
Imagine putting in a nice whole packer brisket or 2 at like 10pm, go to bed, and then about 10am-12pm the next day the thermometer tells you to pull it out. Then eat dinner at 5pm with amazing smoked bbq!!!! :D
