At Walmart the other day I noticed that they now have curing salt in small packages. The only thing is that the salt has discolored and looks to be white. If you shake up the package there is some pink color deeper in the salt.

Would this be safe to use?

I'm not sure, but I think the color is to make it easy to distinguish from regular salt or other products. I'm sure someone will verify (or refute) this soon. Unless it's "Uncle Wang's cure #99" from mainland China. It could be bath salts or anything if that's the case.

Of course there is that pink Himalayan salt...... Now which bag had which in it?

The contents lists 6.25% sodium nitrite, so I assume #1.As I remember it is on the rack with the Little Chief smoker seasoning and jerky supplies. They have only been carrying smoking and jerky stuff since they remodeled and added the food department, probably 6 months at the most. I have plenty for my use and it's cheaper to buy by the pound than their 1 or 2 ounce pack.

If you aren't sure what it is, I would not risk getting botulism toxin. You can buy cure #1 or #2 at most stores like Gander Mountain Mills Fleet Farm or on line at the sausage maker....http://www.sausagemaker.com/curesandcultures.aspx

instacure #1 is the same thing. Just a trade name...

Yeah, it's cure #1, it should be fine.
