Last time I made hot sauce, I went pretty tame.

This time, I got serious.

Started with some fire roasted bell peppers.

And few Japs off 2 of my chili plants.

Yep... and then these fellas. Trinidad Scorpions off my own tree. Since my aquaponics set up is stabilising, the tree is not dropping the chilis before they get ripe.

So THIS time, I wanted to see what damage these things can do. 🥵🥵🥵🥵

Put on some gloves and chopped them up.

Into the pot with the other ingredients and white wine vinegar.

Added water, seasoning etc. Blitzed.

Let me tell you, the tasting was like lining up for a good switching. The first taste had me bending over, hands on knees, coughing. Each time I added a different dash of an ingredient, the hot sauce would burn a new hole in a different part of my palate. This, IMO is a "Hot Ones" candidate at level 8 or 9. When it was on the stove, you'd walk into the kitchen and immediately start coughing for a bit. After a taste, it's coming back up as burp you don't want to have. It gives me the shakes. Seriously.

Anyway... Bottled. Somehow. I don't know how long it's gonna take to break out.

Nope, nope, nope! Looks really good. But I'm not into sauces that will melt your face. Or other regions when it's time to. Well. You know! The hottest I'll go is habs with mango that I make occasionally.
