So as the temperatures cool down here in Sacramento, I was having issues keeping my smoker at temp. So I picked up a roll of duct insulation and wrapped it around the middle portion of the smoker body. I was really surprised how well it worked.  I usually have to keep the thermostat near max.high and was now able to turn it down to a little past medium.

I had 8 B/S chicken breasts in there and they finished in a little under 3 hours @ 250.  It made for some awesome chicken salad.

Still doing lots of reading and searches and really enjoy this new hobby of mine.  So much that I'm selling off my big reef tank so I can spend more time and $$$ on stuff.

 
Cleaned and re-seasoned the smoker yesterday.  It looked gross so I took the SOS pads and the power washer to the lid and body.  Then used PAM grill spray and set it on high for about 20 minutes.  Switching from using water in the bowl to sand and adding a small water container near the element.
