I have a double door dough proofer from a pizza hut, just wondering what the physical characteristics of polystyrene and polyurethane insulation are.  Is polystyrene like styrofoam, the little beads?  Mine is filled with a dense yellow foam.  Any advice would be greatly appreciated.
 
Polystyrene is the little beads and Polyurethane is the yellow foam. 

Polystyrene is not good for heat resistance.  Poor heat resistance!

Polyurethane is very good for insulating both heat and cold.

Both can put out some toxic fumes if burned, but i don't think your smoker will hit those temps.
