Indian cooking - Butter Chicken

I really love Indian food and I go out to Indian restaurants often to satisfy my cravings. The down side is the price of food keeps going up faster than my paycheck so what is a poor boy to do? I decided to learn Indian cooking myself to cut out the middle man and get some of the best Indian food around. I invested in a Misen carbon steel wok to do the cooking and it really works well. I love the Misen products. I have a stainless steel roasting pan, 10" carbon steel skillet, 12" carbon steel skillet, and the carbon steel wok. Anyway, back to the cooking. I have thus far made two types of Chicken Tikka Masala, Balti Butter Chicken, Butter Chicken, Vegetable Masala, Chicken Biryani, and am planning my next dish which will be chicken curry. The butter chicken I made last night turned out absolutely fantastic. Better than the restaurant. I am slowly stocking my pantry with all the needed spices and add one or two for every new dish I make. I am fortunate that there is an Indian grocery store near me so I can get the spices I need for this new passion. I have attached a few pics of my Butter Chicken cook from last night. Enjoy.

Are you making the sauces yourself or buying store bought?I've been using the Melindas Tikka Marsala,Korma and Butter Chicken sauces which are very good but I've often thought about doing it myself.

Looks great! I also love Indian food. Picked up the passion when I spent most weeks in Brampton ON on business. Living in a small rural Ohio town I pretty much have to make mine now too. Bitter chicken is always a fav. Love a good vindaloo too.

I am making it all from scratch. I tried the premade sauces and they just don't have the flavor punch of the home made. They aren't bad, just not great IMHO.

Vindaloo is going to be my recipe try after the chicken curry. There are few Indian dishes I don't like. I hated chick peas until I had an Indian co-worker who brought some in for me that his mother made. They were awesome!! Made me totally rethink my position on Chick peas.

Since I've never made the sauces from scratch I have no comparison to make but that was my thought as well...that I could do better.

There are a lot of good recipes on the web that you can get. https://www.indianhealthyrecipes.com/

This site has so far, given me the best recipes. They take a bit to do all the steps but the results are better than most restaurants I have eaten in.

Only one restaurant around here. Don't get to it often enough.

Amazingly enough, we have three Indian restaurants here in Green Bay. All three of them are very good. I have gone to all of them a time or two or three. :emoji_laughing:

I love Indian dishes and much like you I started making my own. I did it because we have a limited amount of restaurants here. Butter Chicken was the last one we figured out since so many recipes were hit and miss.

Fan of the stuff too but no local. I am not really doing traditional stuff but what I would all indian influenced stuff. I have lots of books and spices now. Curry Bible being the best book and Rani Tikka Masala powder is my fave spice mix. It is _EXACTLY_ the spice profile I wanted for this stuff. I brined some boneless thighs in Pops low salt and rubbed with the Rani before smoking and it was CRAZY good. Jarred sauces are GREAT to play with but need tweaked. Add onion/yogurt/spices to your liking.
 
That looks awesome, JC, I have yet to try butter chicken, but will try it soon now.
Luckily, Indian food around here is really reasonable with many restaurants to choose from. The nights Carol is working, I go out and try new places, if they are good I'll take her out on her days off. I'll make sure to order the butter chicken next time. Thanks for the tip!!!

Besides living in little Mexico/ California, our area has been inundated with Indian's, and unfortunately not the headdress wearing type. Anyhow, I just recently started eating Indian food with in the last 3 to 5 yrs. I went crazy with it after tasting the flavors they come up with, good Indian food is amazing.
After trying several dishes, my go to is spicy Lamb or Goat Vindaloo, if it doesn't make your forehead bead up with sweat with in a few bites, it's not traditional Vindaloo. I love the herb'ed potato and garlic Naan bread as well. I learned how and what to eat from the hot yoga instructor that lived next door to me, she was from the UK, did I mention that she was a SMOKING HOT, blonde!!!
It's a good thing my wife doesn't have jealousy issues.
( WOW!!! Those last few sentences could really be taken in more ways than one.)😬🤣🤣🤣😜

Thanks for the link. I think Iwould like it, but my wife doesn’t like curry. Should be some non-curry recipes in there.

Rani makes great Indian spice blends. Tandoori Masala us great too.

I looked the book up and seen the great reviews. I ordered it and another one that seemed to get good reviews called Made in India: recipes from an Indian family kitchen.

The bible should be here on sunday
