Nine and Half (9.5lbs) Pounds of Wings!
Decided to do up some Wings today, did three flavors with one being a
wonderful Spicy Habanero sauce.
I used a double dredge method for breaded wings today.

Heat oil to 375°

1) Dredge 9.5lbs of wings in corn starch
2) Dip in seasoned eggs
(8 eggs, 1.5t each salt, pepper, granulated garlic and onion and whisk well)
3) Dredge again in seasoned flour mix
(2c flour, 3/4c corn starch, 1T each salt, pepper, granulated garlic and onion, paprika and a 1/2t baking soda)
4) Deep fry wings in batches 8-10 minutes, 185° IT on the bone.
5) Toss wings in your favorite sauces.

I like mine super crunchy so I use a double dredge method and deep fry.

Dredge 9.5lbs of wings in corn starch

Dredge in seasoned whisked eggs
6 eggs
1.5t each salt, pepper, granulated garlic and onion

And dredge again in seasoned flour mix

2c flour
3/4c corn starch
1T each salt, pepper, granulated garlic and onion and paprika

Deep fry at 375° for 10 minutes, minimum 185° on the bone.

I was hoping your were just busy,You aint been fishing on the pier cause its closed down while they work on it, had planned to run down this week but all the virus stuff going on we aint going far. I like your flavors on the wings, I do similar and put the sauces on the side so everybody can customize lol.
 
Looks real good! Ive never used the corn starch before when frying anything. Might have to try it out next time we get the big fryer out. All your different flavors sound really good!
 
The wings do look great. Haven't had a fried wing in a good long while but I would tear up some of those habanero wings for sure.
 
And I just had some air fried 360 breaded strips this morning. Those would have been soo much better. Like!

Ooh those look mouthwatering delicious! Especially those spicy habanero! I could go for some now.

16 wings is about the magic number I could put away, do you split orders? It would be painful to decide on just one kind!
 
Wings look just great!That last pick with finished plate is BEAUTIFUL!I use the same method of cooking wing, like you do.... I know - deep frying is not exactly healthy but.... I love crunchy wings and there is nothing I can do!!!
 
Man those wings look good! I like you like them fried. Something about a super crunchy wing. And love the habanero sauce! I do something very similar. Big LIKE!
