I sm curious what the guy says. FWIW when I first started smoking brisket I could get a packer on sale for $0.19 / lb normal price was $0.29 / lb. I thought it was insane when it hit $0.79 / lb.

I’d not cooked a brisket for several years, mostly due to our move, but our deck is being replaced soon and the grill and smoker will be unavailable for 6 weeks…so I decided to bite the bullet and get one smoked as a last hurrah. The local Chefs Store had the best price, but only huge briskets. I ended up with a $120 hunk of meat, choice, not prime. . And then I managed to slightly overcook it. Burnt ends from the point were perfect, flat kinda dry. But I was pleasantly amazed at what a huge difference dipping each slice in hot beef broth made-it’s a great rescue technique.

I worked for a couple who'd won some awards' restaurant several years ago. Known for the leanest brisket in the area, we were lucky to get 3lb ($17) sliced, and a sandwich or two from the partials remaining.

They made a lot more from using the remaining whole brisket as burnt ends, specials like brisket philly's, chili, nachos, sloppy joes, loaded potatoes. Not a drop of 'jus went to waste, ideally.
