Joined as soon as I found this forum.  Can't wait to search the deep, dark threads and photos for interesting stuff.  Live in Texas now but grew up in Washington state.  Smoked everything when I was young.  Using an old refrigerator.  No time to mess with that stuff now so I use a Mastercraft electric smoker.

Smoked smelt is my all time favorite but hard to find here in central Texas but that's okay, I'll smoke anything.  Held my first annual smoke-off last September.  Invited friends to sample and vote for their favorite....smoked smelt, smoked shrimp or smoked catfish.  Although the smoked shrimp went first the smoked smelt won since it was my event.  Next year it will be a competition between smoked smelt, smoked oysters and smoked clams.  I'm sure the smelt will win again!

Anyway, forgot what I was supposed to write about but check out my Christmas dinner photos in the photo section.  Yummmm, smoker is going as I type!

Hello and Welcome to our addiction.  A word of warning: There is no 12 step program for this one!  Many good folk here with a load of experience that they are more than willing to share.  If you have specific questions just start a thread and someone with experience will be along soon to offer advice.  All info you can provide us with such as smoker type, location and so on will help us answer any questions you may have.  Spend some time doing some research on the forums, tons of advice and recipes already available there.  We look forward to your contributions.  Have fun.  Good luck.  Keep Smokin!
