Ice Bath

Okay I have made some summer sausage today and it is time to come out of the smoker. So it is 35 degrees here and instead of an ice bath what about just cooling off outside?
 
I've thrown some of my sausage into snow banks to cool off. A couple of tips though; Keep moving them around and avoid the yellow snow.
 
I'm guessing that the ice water bath conducts temps better then the air outside. I'd stick with the ice bath for a fast cool down, but that is just me.
 
The purpose of the ice bath is to get the temp down to stop the cooking process. Leaving them outside may not do this fast enough
 
stick with a Cold water bath-yes it stops the cooking process but keeps your sausage from shriveling up-straight from smoker to bath.
 
Well it sounds like a strong vote for the ice bath. Thanks for the quick response...
 
On the weekends, you can count on it. :)
 
Yeppers...stick with the water, get it down to the temp you want, then let those puppies bloom :)
