I started a slab of bacon curing on Sunday, made some Chile Verde and a batch of sausage that I stuffed on Monday. Fast forward to today, I have two butts on the smoker and I just started a batch of Canadian Bacon. It’s a hog wild week when the pig goes on sale. I also added two six pound loins and an eight pound butt to the freezer...
 
No intervention needed. If I had the time to smoke everyday, I would. Just started in October of 2017 and it's something I couldn't see myself not doing. Not sure why I didn't start earlier. It's crazy to see what we could create using a smoker.
 
Naw, nothing wrong here. Just enjoying what you like.
Now where I would draw the line is if any goes to waste. Now that is criminal.
Freezer fair is great. That way if you feel like your supplies are dwindling, or you find you have time on your hands, just pick something out and smoke it.
I like having raw materials and finished fair in the freezer. And nibbling stuff in the fridge.
Got enough to get through a month?
 
There’s only two of us, so most of this gets sealed and tossed into the deep freeze. Nothing goes to waste(it does go to my waist). I just don’t normally have this many pig projects running at the same time. Even though it is a magical animal. :D
 
I need the cardio to counter all the pig I’m eating. :)

Pork is the other white meat.
And Heart Smart.
I tend to look at beef and see a pile of cholesterol.
(But I do love some Beef Jerky.)

Love a Pork Roast done on the rotisserie on the Barby.
Stab it with a sharp knife and buried garlic cloves in it. Oh! Soo good!
