So yesterday, it was a beautiful Saturday morning at 5am. I wake up to birds and sun peaking in. "I'm gonna throw on that brisket I've been eating to cook". "7 hours should be OK, maybe,it's only 5 lbs". Well, as it turns out it wasn't. I fired up my pitboss 820 and had rubbed the brisket with salt and pepper. Got it on the smoker at about 5:15 am at 37°. Let it smoke at 225-250 until about 12:00 when we had to leave. I pulled the brisket at about 175°. Yeah, I know, bummer. I wrapped it in double layer of foil and let it rest while we were gone, about 3 hours. Got home and it was at 77°. I put it in the fridge. What should I do to try and save this brisket? I kno it is technically cooked and can be eaten, but I don't want it to be tough. Any thoughts would be great. Thanks guys!!

You can cook it in the foil at high temp like 300 or higher to beside it until it gets to 200ish it.
