I need ideas for a Mexican dish, por favor :)

A friend of the family is having a "Bring a Mexican Dish" dinner this Sunday, so I'd like to throw something in the smoker to take. I figured that I can smoke something on Saturday then finish it off Sunday morning, BUT WHAT???

"Carne Asada" was the first thing that I thought of, but I'm not quite ready to tackle that one yet. I have some BS chicken breasts in the freezer, so maybe some fajitas or something? The last breasts I did came out mighty tasty but didn't brown very well.

I'm totally open to any and all suggestions and recipes. PLEASE HELP!

How about pulled pork tacos, easy and good.
 
Make some pulled pork, then make some sauce from tomatillos, jalapenos or serranos, onions, garlic, cilantro, salt, pepper. Get a big batch of corn and flour tortillas and have a party. Also get some limes and sour cream and plenty of chips, maybe some sliced radiches.

A big pot of Pinto beans.. cook up 2-4 ground beef patties...Maybe a pork steak or two....crumble the beef and dice up the pork and add to the beans...Of course onions, garlic, cumin, maybe some chopped jalapeno etc is a gimme. Make em taste good!

You guys have some excellent points! I was thinking about refried beans, too, but that's too obvious (although I pride myself on making some awesome refried beans -- bacon grease is always involved).

I think that I'll go with some smoked carnitas, though. Maybe I'll be able to find some authentic seasoning recipes in time. If anyone has one then, obviously, I'd love to hear it.

I love Mexican food, I make it at least once a week sometimes two, here is my go to Mexican seasoning:
6 tsp chili powder 5 tsp paprika 4 ½ tsp cumin 3 tsp onion powder 2 ½ tsp garlic powder 1/8 tsp cayenne pepper mix it up in a spice grinder

This is how I make carne asada;

Flank steak, squeeze on some fresh lemon juice and rub both sides of the meat with the lemon, liberally sprinkle on some of the seasoning, repeat with each successive layer, marinate overnight. I cook it on the grill, after its cooked slice it in 1 ½ inch pieces with the grain and then 1/8 inch slices across the grain, keep hot.

Pico de gallo

Tomatoes seeded, jals or habs your choice, white onion, cilantro, salt pepper and cumin, smoke the tomatoes, peppers, onion for 1 hour, mix all ingredients in a food processor.

Heat some corn tortillas in a CI skillet, place some of the carnitas meat in the tortilla and then top it with the pico de gallo, roll it and enjoy, can be accompanied with refried beans and Spanish rice.

Chicken also works well in the above recipe or:

Chicken fajitas

Marinate cut up chicken breasts in Mexican seasoning with a little corn oil for 8-10 hours, cook in CI skillet, remove and saute onions and bell peppers, add cooked chicken and toss to coat veggies with seasoning, serve on warm flour tortillas, ...I prefer corn when I have them.

Or if you want to take it over the top,

Fish tacos

Brine the fish in a simple salt-sugar brine for a couple of hours, especially if it isn't fresh, we use tuna or swordfish, but then the're swimmin' in the back yard.

Rinse fish and coat lightly with Mexican seasoning and marinate in corn oil for a couple of hours, then smoke until fish flakes apart easily, do this a day in advance, the smoke flavor is dynamite the next day (if you can keep the wife from eating it all).

Fresh fruit salsa

[font=&quot]1 cup each, cut into 1/4 inch cubes, kiwi, pineapple, mango and papaya[/font], 2 avocados cut into 1/4 inch cubes, 1/2 cup fresh cilantro chopped and the juice of 2 limes, mix all ingredients just before serving.

Reheat fish and break into small pieces, place in warm corn tortilla and top with fruit salsa.

Enjoy whatever you decide on, wish I was there eating it with ya.

Didn't read all th posts but I take a butt, smoke it up regular, pull large chunks, not full pull, spice it up with carnitas seasonings and fry the large chunks in lard in a dutch oven. Yes lard. Just to crisp up the bark and give it that carnitas flavor, oh my goodness. Wait til you try that action,.
 
I think that's exactly what I'm gonna do, and I'll use the seasoning that JustPassingThru posted.

WELL! I've discovered that I was not actually invited to this event, and my mother even had the nerve to ask me if I would make some carnitas for her to take. Naturally, I gave her directions to the nearest cliff and told her to jump off of it.

All of this talk about carnitas has got me stoked, though, so I might still give it a try this weekend. Thanks again, everyone!

I still want to share a easy one-usual fattie formula only Mexican rice in the center with some Jap or cheddar cheese-or chilis, or.... I have mixed the sausge with some chorizo as well. So you can just eat it yourself w/o sharing. Some shrimp in there is good too. i like the Mex rice that is heat & eat,seems to hold together well.
 
Have you tried pinto beans with sliced jalapenos, or mac and cheese with sliced jalapenos? Chile rellenos are always popular along with chile verde or chile rojo, or chicken mole. Was I through?
