I love Mexican food, I make it at least once a week sometimes two, here is my go to Mexican seasoning:
6 tsp chili powder 5 tsp paprika 4 ½ tsp cumin 3 tsp onion powder 2 ½ tsp garlic powder 1/8 tsp cayenne pepper mix it up in a spice grinder
This is how I make carne asada;
Flank steak, squeeze on some fresh lemon juice and rub both sides of the meat with the lemon, liberally sprinkle on some of the seasoning, repeat with each successive layer, marinate overnight. I cook it on the grill, after its cooked slice it in 1 ½ inch pieces with the grain and then 1/8 inch slices across the grain, keep hot.
Pico de gallo
Tomatoes seeded, jals or habs your choice, white onion, cilantro, salt pepper and cumin, smoke the tomatoes, peppers, onion for 1 hour, mix all ingredients in a food processor.
Heat some corn tortillas in a CI skillet, place some of the carnitas meat in the tortilla and then top it with the pico de gallo, roll it and enjoy, can be accompanied with refried beans and Spanish rice.

Chicken fajitas
Marinate cut up chicken breasts in Mexican seasoning with a little corn oil for 8-10 hours, cook in CI skillet, remove and saute onions and bell peppers, add cooked chicken and toss to coat veggies with seasoning, serve on warm flour tortillas, ...I prefer corn when I have them.
Or if you want to take it over the top,
Fish tacos
Brine the fish in a simple salt-sugar brine for a couple of hours, especially if it isn't fresh, we use tuna or swordfish, but then the're swimmin' in the back yard.
Rinse fish and coat lightly with Mexican seasoning and marinate in corn oil for a couple of hours, then smoke until fish flakes apart easily, do this a day in advance, the smoke flavor is dynamite the next day (if you can keep the wife from eating it all).
Fresh fruit salsa
[font="]1 cup each, cut into 1/4 inch cubes, kiwi, pineapple, mango and papaya[/font], 2 avocados cut into 1/4 inch cubes, 1/2 cup fresh cilantro chopped and the juice of 2 limes, mix all ingredients just before serving.
Reheat fish and break into small pieces, place in warm corn tortilla and top with fruit salsa.
