Oh Yea Dave! If I go with a hot plate I will strip it and make a mount for the element. I'm looking at this element from Brinkmann:

Well I bit the bullet and ordered it. I read the reviews and I think this burner should work great. I'm going to try it in my GOSM and see how that goes. I'm going to order the programmable PID next paycheck.

Look forward to seeing your pictures of your progress Dave. I got my grinder in this week. Hope to start on the smoke house soon. May have to check out the grinder on some breakfast sausage while I'm waiting!

Thanks, that is a big wood boiler next to the smoker. It heats 396 gallons of water and circulates it through a gas boiler in the house. I made the racks out of oak scraps. They are wide enough to hold the dowels that fit in my smoker. The sausage goes on the rack on the dowels then in the smoker then back on the rack for blooming. They work great and were easy to build. I put 2 more together for my brothers Smokin Tex.

Thanks Todd! Looks easy enough to build, maybe I give it to my Dad, he loves building little things like that!

Thanks Tim! I picked up the lumber and materials today and got the receptacle installed. I could have sworn Lowes website said they had the rockwool insulation in stock but they had to order it so it will be another week before I can put the Durock in. Gonna get started on the build tomorrow so should have some pics tomorrow night!

ok Dave.. I'm in.. think I'm gonna have to hold off on mine... selling the house and building a new one on the lot next door (we hope)...

I had to order mine too ... Too bad you don't live closer, I have a bunch left over that I could give you.

all you need is one more part and that is a ssr relay and you will be able to control anything up to the limit of your supply from auberins for the same cost.
