I would do an advanced seach of Squirrels threads for she has done them a bunch. That girl cheryl could make a old hammer taste and look good enough to eat. Or you could take it out and pound it out thinner and then stuff it like a fattie and then smoke it to maybe 130* I would say.
What are you looking for exactly? I have a recipe from The Southern Living Cookbook for a mushroom stuffed tenderloin. I've never cooked it in a smoker but I son't know why you couldn't as long as you didn't co too smokey. PM me if you want the recipe.
