     Hi all! My name is Iván.

I just joined after two hours of reading and looking your forums. You have built some community here!

I am at a novice level -I have been there for 5 years- :) I have only smoked brisket, and I can say everyone that has tried it likes it.

I live in México right across the Rio Grande -Rio Bravo- from El Paso Tx. in a city called Juárez.

     My first attempts at smoking were inspired from some pastrami sandwiches I had in Los Angeles, California. Some friends joined me in investigating how pastrami was made and we came up with a recipe and procedure to smoke brisket. Since I was the only one who knew how the meat should look and taste it was up to me to decide if we nailed it. The first 4 or 5 briskets went from smoker to the trash can as carbon pieces! The smoker was a bullet smoker which we called R2D2 like the star wars movie robot. The 5th or 6th attempt was black all over so I "stabbed" it with my big fork -the one that is long and has only two "teeth"- to throw away and the fork just went through it like butter. It was all pink inside and the grease came out like crystalline water. I jus new then we had nailed it. It was delicious to say the least. We wer all exited. I cannot say for sure if what we cook is pastrami but it is soooo good!

     We then built a smoker we call "The pharaoh". I have to figure out how to post pictures. The last time we smoked brisket was Saturday the 27th of October and I have some pictures to post.

     Wow! this got long for an introduction! :)

     Reviewing the things we have smoked I was reminded that we smoked some cheese and nuts -savory and seweet-.

     For the savory we used paprika, black pepper, tabasco and some other things I don't' remember. For the sweet ones we used honey, cinamon, cloves,and I think crushed coriander seeds.

     I guess if I want to post pictures of the smoker "the pharaoh" and the cooked meat it should be at the smokers forum, right?

Welcome from Tulsa, OK. You will find a great deal of stuff here in the forum. I have learned so much this year. I have found inspiration to try new things and techniques. Looking forward to seeing your pictures.
