Ok here goes, I am working on a new home made smoker in my head, kinda scary, but............................................... .......
I have a few questions I want to ask, and see what my smoking friends think.
Which metal should I build it out of, a guy at work seems to think I can come up with enough junk Stainless Steel at work to make my smoker, but I was thinking of going for cast iron, any suggestions?
I am planning to build onto a trailer a small 10 to 12 footer, do I want the heat source at the front (tounge ) of the trailer or at the rear?, also I am thinking of going with propane and a smoke chip/chunk box, I know most competive smokes require wood/coal heat only, maybe I could make a sidebox that the propane element could be removed to use coal/wood only if needed.
I am not building with permanent racking, I am thinking more of the oven type setting with adjustable racks, that are removed when not in use.
I am thinking of a twin door box, that would be about 4 foot tall, and between 30 and 36 inches deep, with my racks being about 30 inches wide, the doors would open from the middle and away from each other, I also plan to have racks tagged, as I have friends who are non pork eatters, and would have racks for just pork, and others for everything else.
does this sound like a big dream, well for me it is, but I am thinking of putting this monster together in the next year, I will post photos and keep everyone updated, but give me any ideas, I need all the help I can get!
