I was gifted a couple of Goose breast, So I decided to make a recipe I use for chicken. I pounded the breast out and seasoned them. I then put cream cheese and green onions in the middle, rolled them up, seasoned the outside and wrapped them with bacon. I smoked them for several hours and they are delicious. I made some Homemade brioche po'boy loaves and made my son a sammich with the bacon wrapped cream cheese goose, melted cheddar, mayo and homemade pickles on the fresh toasted brioche bread. I may have just created a goose hunter lol.
