   I'm always going on about the way I do my BBQing,and feel some out there think I overdo the explinations of how I do it, wondering if I really do these things

   I am a poor boy and have to make the best of what I get.I would like to compete but lack the funds.That said,I have been leading some of the members in my old way of Smoking.

I am also extremely spoiled by the Wife;when we moved from Tex. to oihO,we saved and got a smoker cause there was no good BBQ in this place,so I talked her into the big pit.We have a lot of Family here and do for them,but the pit put us in a hole...NO I'm not looking for anything,we just invested just at the time health was goind downhill;but I'm not getting rid of my baby,so I take care to do it right.And I don't want to sound better than anyone! I just have MHO!

   Now there are a few National Chains and they aren't what I call GOOD by any means,passable and due to the way they have to do it ,they can not get a real good smoke on them like one would get at home.

   I'm not talking about a sauce that would be good on meat and call it BBQ .When I do a Smoke,I want my meat to stand out (sans sauce).That is the reason I say OLDSCHOOL.

   Like I said I am a poor boy and everything has to be right,so I do it slow-without set and forget.I search for wood not being used,and get sales when I can and do the best I can do with it for the Family.They love it and the FIL will not go to any other BBQ place at all, they even beg me to do Briskets for them and Butts and Ribs and.....

   What I'm trying to say is,take my opinions,think about them and do what you want;I don't lead anyone wrong,so.....   But even though someone doesn't compete,doesn't mean they don't know.I just don't have the $$ to prove it to anyone else(wish there was an ordinary guy BBQ show that showed the real facts of the way people BBQ).Now that would be a good watch! And maybe give some poor soul a tiny piece of pie,(Bragging rights).

   I am a, don't fix what's already good, person, and all this stuff is OK, but it ain't Rocket Science.It just takes time to turn out a good "Q",IMHO.

   Some have to have it all and some with little,so I've set myself in the middle and do it My way.I would love to have anyone as guest(just bring the meat as I am poor-remember),and see how I do what I do.And if you need a good Pitman on your Team,the Wife would love to give me to you.I want meat too much,and being disabled,I don't make ends meet,but I'm not giving my Smoker up until I'm dead...

   Sorry,I just had to get that out.

Stan number one I don't believe you over explain things at all.

I for one get a lot out of your posts and appreciate your wisdom, now before I ramble, I hope someone didn't give you a hard time!

And I am as lucky as you when it comes to wives, cant believe my wife puts up with me.

Pretty much everything we post here is opinion based on experience, I would hope that members on this forum understand that.

Everyone has a choice on this forum to use or not to use the advice given in a post and are responsible to make their own informed decision, this is their responsibility.

There is a little bit of a learning curve to asking questions as well as posting answers, hell I am still learning after 4 years on this forum.

I have been trying to make my post a little more useful, especially to the newbies because a lot of the time a generic question will be asked and everyone chimes in with their opinions, which is great and why we are here, but many times...especially the newbies, will take the info and run with it, Then post a few weeks later with undesirable results.

What is happening is, we give advice based on our Application, such as fuel source and smoker, while this is fine, some newer folks do not pick up on this. So a member smoking on a Grill maybe taking advice from a stickburner that may not apply to his method of smoking on a particular cook.

Or a guy going through 100 pounds of charcoal is wondering why the UDS guy is getting butts done on a 20lb bag.

I will use my stick burner to Barbecue and my goal here is trying not to impart smoke flavor into the meat but rather a traditional Low and Slow "Q", I will use my GOSM BB when I want to try and add smoke flavor to the product.

I will smoke the same product differently on my GOSM as I would on my stickburner and may run my stickburner a little hotter on a cold rainy day or a windy day. Sometimes I'll use Lump or Charcoal as fuel, even woods have significantly different BTU ratings, so someone giving advice on their stickburner using cherry, may be giving advice to someone using a stickburner with hickory, major difference in my opinion.

But many use Smoking synonymous with Barbecue, to me they are different.

And many folks refer to grilling as barbecuing, go figure.

So many Variables.

Am I making any sense or am I just rambling away.

Well anyway;

I have been trying to convey that there is not any one cure all answer and the importance of pictures and detailed information.

Things to consider when getting advice is the application being used, such as ... what fuel are they using, what temps are they running, what's the current weather conditions such as rain, wind, and what smokers are they using as well as the desired results.

.I love the forum and wish I could help more,but my disability isn't that much and we have to scrimp and save. However,I will be on here till the man says come home.

Keep on smoking and keep on posting. 

I frequent your posts when I can get on for a short period here lately.  working to much,   I know it's a good problem to have but gets old sometimes, especially since my smokers broke.
 
   Werd, I've got an unused and lonely Smoker,if you need from a Brother with the same Disorder, I'd be happy to loan- Heck -even give it to you for Threaphy.
