221 method is for 225*. For FOTB you'll need to cook a little longer in the foil. You food looks wonderful I agree with others your addicted.

Thanks for everyone’s comments! I found out what happened last week with the ribs as I am now smoking a pork butt that has been smoking for 15 hours with the MES set to max temp of 275 F. The internal temp is only 150 F! I ran to the grocery store and returned with an oven dial thermometer and it is showing a steady 200 F inside the chamber vs the 275 F that I have it set at. Looks like the butt will be finished in the oven and the MES returned to Sams Club. I wish I still had the original box! Again, I just received this for Father’s Day, so I am very disappointed in the MES at this time. Should I exchange it for another unit or switch brands? I would like to continue using electric vs another method.
 
I just confirmed that the new oven thermometer is working as it displayed 395 with my oven set to 400. MES will be returned to Sam’s. I am leaning toward an exchange since others have had success with the MES over many years. Hopefully the replacement is not a lemon as well...
