Howdy Yall,

My name is Jason and I live in Thermopolis, Wyoming. I have been smoking meat for a little over 4 years now with a Brinkman Smoke N Grill that I picked up at Wal-Mart for 50 bucks. Despite its limitations, it has served me well on my journey of learning the craft. I have darn near mastered pork butts, and do fairly well with ribs and chicken.

Today, I am attempting my first brisket. It's just a little guy (6 lb flat) but it barely fits in my smoker. I've had it smoking for 3 hours so far. I was thinking about probing at the 4 hour mark, but any tips would be welcome. Thanks in advance!

Welcome to the forum!

Sounds  like your doing fine with that brisket.

Thank you Al! Nice to meet you!

I've learned a great deal from the posts in these forums over the years, so I figured it was about time I joined in.

I'll let you know how the brisket turns out. Enjoy your Saturday!

Jason
