I've grilled with propane for years and always wanted to try my hand at smoking. I found a Black Friday sale on a pellet smoker and the time is now.

My ultimate goal is to smoke brisket like they do it in Texas. I'll start with some less complicated chickens, etc., and work my way there. I just found a recipe for smoked stuffed peppers that looks terrific.

That is how I started off. By learning the basics. Pork chops, ribs, loins, shoulders, chicken and Turkey before giving brisket a go. Gave me the opportunity to learn some basic stuff before attempting brisket.

Look forward to reading about you progress in becoming a pit master.
 
Start with wings or ribs imho. Cheap and easy. 2 hours for wings or 6 hours for ribs. Both fairly flexible. :-) enjoy, Take pics, post threads and enjoy.
