Just sounds like one of those pieces of meat that are stubborn. Also injecting it adds moisture and more water mess to the meat that has to be warmed up then, so that could have slowed down it as well( even though I have a MES30 and have used this recipe many times without this happening) but different machines handle differently and different pieces of meat also act differently

May I ask what year and model number your machine is? Reasoning: I know there is a certain generation of MES30 that many SMF users say to avoid. Something dealing with the element is too small and has trouble heating things? Anyway just keep us updated!

As a quick update I don['t know the year...I bought it last year August 2017 at Walmart for $35 since it was the close out sale. I will check out the model/year when I get back outside to check on the smoke and temps.
