how to keep smoked cheese.....

Ok here are my questions...I hope this make sense...
1. If you smoke snack sticks you don't need to ref to keep correct? You can keep them in a sealed container on the counter?
2. Is this the same case for smoked cheese, Smoked pastrami & smoked Canadian bacon? Or do these sort of items need to be kept in refrigerator?

Thinking of making these and making a basket of good stuff for the holidays for some family members but I wasn't sure on this.

I keep my stuff refridgerated if at all possible I know there is some one on here that sends to Afganistan to the troops but I dont know what he is using

are you sending baskets in mail or hand delivering them??

Should be cold in your area for the holidays they would prob stay fine in trunk or unheated garage. till giving time??
 
I am courious about this as well. My kids love snack sticks and cheese sticks. I am new to the curing so not sure. But if I was to assume I would say it has to do with what cure is used for the snack sticks. As for the cheese I am guessing it has to be the way it is packaged to be air free and sanitary so it does not have to be refrigerated. It is possible, I see them in the stores all year and now with the gift baskets for this season....
