Best video I've seen yet for dry curing Coppa... @ the5:25 minute mark; 15*C (59*F) and 80-85%RH.....150 days.....



That is why I run my chamber 80-85%RH.....slow drying.....
 
My first dry cured coppa is about 40 days in and covered with good mold. Going a little slow as I’m in a makeshift curing chamber that’s running cold, but I can’t wait to try it.

Interesting that they take the coppa outside to remove it from the casing. Somehow that improves the quality and the value of the product.
