How to Cook A Wild Hog?

What we call wild hogs today were once just called hogs by country folks!

When my father was a kid most all farmers let their hogs run wild. When they wanted pork they hunted one down; usually with a .22 rifle. Back when I was a kid when we hit the Louisiana state line, on the way to visit relatives, we would see a warning sign about free running hogs, so it hasn't been Too long ago this was still a practice.

If you want to freeze for a while you can kill the nasty worms if frozen long or cold enough. Otherwise cook to kill the beggars. Beyond that cook as normal. Depending on diet, genetics, and time of year they may be fat or lean.

Good deal, thanks. Shoulder came out great! Took 9.5 hrs at 240F, wrapped at 160 and finished to 204F then rested 1.5hrs. Great meat, poured the juice back in - didn't need a finishing sauce. I won't feed 'em to the gators next time, lol. (Used pecan to smoke it BTW)

That looks great man! Wild hog meat taste soooooo good. Its like another kind of meat vs farm raised. I compare it to dark meat on chicken its like dark meat on pig :D
 
Yeah it was tasty, not as good to me as a domesticated butt but good none the less. We didn't have them around us for the longest time but now we're infested with them. Killed a big boar hog Saturday but the smelly bugger isn't going to make it to the table. My LEM ham kit was supposed to be here today but now won't arrive until Wednesday. Hated to do it but I decided I better freeze the hindquarter and loin for now. Scheduling would have been too jacked up for me to start the process then.
