How much smoke

Hello all,

I'm new to smoking and just got a offset smoker and I'm gonna try some ribs in a few days. My question is after I smoke the ribs for 2 hrs and wrap them in foil, I'll put them back on the smoker but do I keep adding more wood or do I just control the temp with the coal? I would think that having smoke going for 5 hrs would be a bit much for the taste. maybe a few days after that I will try a whole chicken too and the same question is in my mind. Do I use wood the whole time or just enough to get the flavor. If I'm wrong please tell me. Any help would be great.

I smoke my ribs in a MES and use the 3-2-1 for spare ribs and will do baby backs with a 2 1/2-2-1 method. I keep the smoke going until I wrap them then I stop adding chips. After I unwrap them and put them back on for the last hour, more chips for me. Good Luck!
