How much smoke time for whole chicken?

    I know everyone's tastes are different, just looking to maybe get a base for what would be appropriate since I'm going to try smoking a whole chicken for the first time today. The recipe I'm using says apply smoke the entire time its cooking which will be 4-5 hours maybe, but I always hear chicken is real sensitive to smoke flavor. So what is everyones personal preference on how long and what wood for whole chickens? I planned on using orange wood today. Cheers[​IMG]

Hello Brandon.  I would guess I am gonna be your worst nightmare.  4-5 hours to smoke a yard bird??  Spatchcock that bird, run your smoker temp up to 300-325 and smoke it for 1-1 1/2 hours.  Life is too short for silly smoking times.  I say that with a reservation:  SOME meat MUST be low and slow.  I can hear other members screaming here but chicken isn't one of those meats.  Hot and fast works better for chicken.

    I'll take that into consideration, however my smoker only gets to a max temp of 275. I was thinking of taking it out of the smoker at around 145-150 and throwing it on my grill at 400 degrees so the outside gets nice and crisp.
