i plan 5 hours if it gets done sooner it gets consumed sooner pull at 160 ta 165 i let cool easyer ta slice always cook by temp but a good time frame at 210 to 225 is 4 to 5 hrs thats for 2.
1 fatty 3 to 4 outside temp also comes into play
I really don't time mine. However, I use the 1 lb. sausage rolls and cook them about 3 hours or so at about 250-275. I wait until it gets a really nice dark brown color on the outside and then I consider it done.
