Just got my MES40 and use wood chips that have little if any bark. Plan to buy larger chunk wood with the bark on it and make my own chips that include the bark but would like to know how important the bark is for smoke flavor.

THANX,

Boyd

I use large wood chunks in my GOSM and splits in my Lang. Some pieces have the bark on them some don't. I don't really notice much difference in taste one way or the other. If you have bark that shows signs of mold or has lichen growing on it, I just remove the bark and use the wood in the smoker.
