If there's any plastic, I wouldn't trust it. Test the "glass" by lightly tapping on it with the butter end of a metal butter knife. Plastic will sound like a dull thud. Glass has a "tink" sound.
I have 4 meat therms and one oven therm, not counting my wireless. I do not leave the meat therms in the meat. I use them to test meat during or after a cook, kinda like an instant read. They respond quickly. The meat ones all have plastic "glass." The one oven therm that sits on the shelf has actual glass.
When make jerky, I put one of the meat therms in the oven door to vent steam from theat and keep track of the oven temp. It doesn't get hot enough to melt.
