Just seeing this thread for the first time. Salmon looks absolutely wonderful!! Now I want some smoked salmon!

I use Alder and Apple.  Depending on the size of the pieces will dictate how much smoking time is required.   This Sunday I will be doing about 7# of King Salmon in both nugget and filet sizes, while the wife is out catching more fish for us.
